The grapes are left in the sun to dry, and when they have lost approximately 50% of their weight, the juice of these raisins is extracted and then added wine alcohol to stop the fermentation from triggering. They are aged in old American-oak casks following the traditional ageing system of Jerez, soleras and criaderas.
