Sierra La Solana is a totally new production concept in La Mancha. It is a moulded rind cheese with only two months of maturation that is not pressed during the production process.
With this we obtain a product of soft and creamy consistency, although firm when cut. The aromas and flavours correspond to little evolved milk with a subtle and elegant acidity derived from the absence of pressing.
